How it started

Started with one grill and a queue out the door

Double Stack opened in Dubai in 2014 with a single grill, a fryer and a menu chalked up on a board because there was never time to get one printed. The queue reached the door before the sign outside was even hung straight, and the menu has stayed short on purpose ever since — it is the only way a counter this size keeps moving on a Friday night.

We still cook the same way we did on day one: nothing goes in the bag until it has been ordered, and nothing sits under a heat lamp waiting for someone to want it. That is slower than reheating a tray of patties in one go, and it is also the whole reason people keep coming back for it.

No shortcuts

Three things we don't compromise on

None of this is written down anywhere in the shop, but every person behind the counter knows it before their first shift ends.

Cooked when you order

Every patty hits the grill after the order comes in, not before. It costs a few minutes; it is why nothing here ever tastes reheated.

Halal, always

Every supplier we use is halal-certified, with no exceptions and no second menu hiding behind the counter. It is not an add-on — it is the only kitchen we have ever run.

Never frozen, never microwaved

Buns are baked that morning, patties are cut fresh off the block, and there is no microwave on the premises to cut a corner with even if we wanted one.

The team

Four grills, one team, no shortcuts on a busy night

There is no back office here — whoever is on shift is standing at the counter, on the grill, or running the fryer, often all three inside the same hour. It keeps the place honest: if an order is slow or wrong, the person who made it is the person standing in front of you.
