How it gets made

  1. 01

    Weigh it

    Chuck and short rib, coarse ground each morning, rolled into 80g balls. Never pressed, never stacked.

  2. 02

    Smash it

    Ball hits a 260°C plancha and gets thirty seconds under the press. That is where the crust comes from.

  3. 03

    Cheese it

    One slice per patty, laid on at the flip so it melts with the steam rather than the heat.

  4. 04

    Send it

    Buns toast in the fat left behind, the stack is built in one move, and it leaves the pass inside nine minutes.

The pass at the Shoreditch arch

Since 2019

One griddle, one grind, no freezer.

We opened in a converted railway arch in 2019 with a second-hand plancha and a single mince supplier. Both are still here. The beef is coarse ground the morning it is cooked, the onions go on at six, and nothing on the pass has ever seen a freezer. That is the whole trick, and it is not really a trick.

Before you ask

The usual questions.

If it is not here, the counter will know. So will the phone.

No, and we are not being difficult about it. Every seat is walk-in, most of them are at a counter, and the queue moves faster than a booking system would.

Medium by default, because a smash patty is thin enough that anything else dries it out. Ask and we will do what we can, but this is the one we will argue about.

The Green Room, and it is cooked on its own section of the plancha. Vegan on request — say so and the cheese and sauce swap out.

Within three miles of each kitchen, on our own riders. Beyond that a smash burger does not travel well and we would rather you did not have it.

Two farms in Oxfordshire, chuck and short rib, ground coarse each morning by our butcher in Bermondsey. Never frozen at any point.

Up to six turns up and waits like everyone else. More than that, email us a week ahead and we will hold a section at the quiet end of service.
